Are you ready for some football?! Well, a Super Bowl party is not a party without some sweet treats. Since I am trying to stick with my theme of “small bite in one hand and a drink in the other, these Mini Sweet Potato and Maple Muffins are just right.
I snatched this dessert recipe idea from Marie Callender’s and added my personal flare. I used a mini muffin tray and cups so that it’s bite sized and not so easy to overindulge. It’s quick, easy to follow and will definitely have your guests craving more!

Try an olive oil based mayonnaise instead of regular mayo. It contains less saturated fat and fewer calories. I also prefer shredded Swiss cheese over cheddar, which has less saturated fat, and wheat dinner rolls instead of white.
