Even though my team (Colts of course) didn’t make it to the Super Bowl finals, I’m still planning to take part in the festivities. Go Seahawks!! I love a good party and will jump at any excuse to throw one.
Super Bowl Sunday is less than two weeks away, so that means I’m on the hunt for cool game-day ideas. I’ve found some yummy recipes such as these easy, 6-ingredient, beef sliders from allrecipes.com; tiny enough to hold in one hand while leaving room for a drink in the other hand.
But wait! Before you decide to abandon your fitness goals for February 1st, I’ve tweaked this recipe and substituted some ingredients with healthier options. Try an olive oil based mayonnaise instead of regular mayo. It contains less saturated fat and fewer calories. I also prefer shredded Swiss cheese over cheddar, which has less saturated fat, and wheat dinner rolls instead of white.
Slider Style Mini Burgers
(This recipe makes 24 sliders)
2 pounds lean ground beef
1 (1.25 ounce) envelope onion soup mix
1/2 cup mayonnaise with olive oil
2 cups shredded Swiss cheese
24 dinner rolls, split (I prefer Sara Lee Wheat Dinner Rolls with Honey)
1/2 cup sliced pickles
1. Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
2. Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.
3. Lay the bottoms of the dinner rolls on the prepared baking sheet. Spread the cheese and beef mixture on the bottom half of each roll. Replace the tops. Cover with another sheet of aluminum foil sprayed with cooking spray.
4. Bake in the preheated oven until the sliders are heated through and cheese melts, about 30 minutes. Serve with sliced pickles.
