It’s grilling season, and we have some delicious Meatless Monday recipes lined up! If you have been following our Meatless Monday challenge on NUBIAMAG, you will all know of my love for tofu and anything spicy!
This recipe combines the sweet and tangy flavor of mango and pineapple with spicy jerk seasoning. It is the perfect coupling of two of my fave ingredients, and a quick and easy option for some weeknight grilling.

1/2 cup chopped fresh mango
2 green onions, trimmed and roughly chopped
2 tablespoons rice vinegar
4 1/2 teaspoons reduced-sodium tamari
1 teaspoon ground allspice
1/2 small jalapeño, seeded and chopped
1 (14-ounce) package extra-firm tofu, patted dry and cut into 1-inch cubes
1 red bell pepper, cut into 1-inch cubes
1 yellow bell pepper, cut into 1-inch cubes
1 1/2 cups (1-inch) pineapple cubes
Prepare a grill for medium-high-heat cooking. In a blender or food processor, blend mango, green onion, vinegar, tamari, allspice and jalapeño until smooth.
Thread tofu, peppers and pineapple onto skewers. Brush with mango sauce and grill about 4 minutes per side or until warmed through and tender. Serve with any remaining sauce.
